The Baudin family’s history dates back centuries, with a Tastevin engraved in 1685 by an ancestor as a testament to their legacy. Like many rural families, they once cultivated cereals and livestock. In the past, Chasselas was the main grape in Pouilly, sold as a table grape.
It is in 2012 that Lilian took over the winery from his father Guy. In partnership with his brother Yvan and his wife Christelle.
Today the domaine is composed of 12ha of Pouilly Fumé and 1,5ha of Pouilly sur Loire.
From vineyard to cellar
Winemaking is a pivotal process that reflects the winemaker’s vision and style. It is centered around authenticity, with each vintage being unique due to the influence of natural yeasts present on the grapes, as well as the specific climate conditions of that year, including sunshine, rainfall, and any unpredictable weather events.
The wines are aged in concrete tanks and stainless steel barrels, with minimal intervention. No sulfites are used during the winemaking process, and natural yeasts are allowed to ferment the wine. Filtration occurs naturally by gravity, a method that contributes to the wine’s vibrant energy and character.
