Authenticity of the Terroir
Domaine des Chasseignes is a family-run winery located in Sury-en-Vaux, specializing in producing wines from Sauvignon Blanc and Pinot Noir grapes. The estate spans 9 hectares, with 8 hectares dedicated to Sauvignon Blanc and 1 hectare to Pinot Noir. The vineyards benefit from three distinct terroirs: Terres Blanche (kimmeridgian limestone), Caillotes (clay and white limestone), and flint.
This diversity contributes to the unique characteristics of their wines. The estate has been under the management of Aurore Dezat since 2011, with David joining in 2016. They have adopted organic farming practices and received Organic Certification in 2023.
From vineyard to cellar
The vineyards are carefully tended, with practices such as plowing, cover cropping, and the use of green manure to enhance soil fertility and biodiversity. The estate avoids chemical herbicides and anti-rot products, preferring natural methods.
Harvesting is done manually to ensure the quality of the grapes, and the winemaking process is minimally interventionist to preserve the terroir’s expression. They utilize long pneumatic pressing, low-temperature racking, and fermentations with neutral yeasts in various vessels, including foudres, amphorae, and barrels. Some cuvées are aged without filtration, allowing the wines to stabilize naturally.
This meticulous approach to viticulture and winemaking reflects their commitment to producing high-quality, terroir-driven wines that express the unique characteristics of their land.
